Ingredients
Serves 6–8
Seafood & Add-ins
- 1½ lbs large shrimp, deveined (shell on)
- 1 lb snow crab clusters
- 1 lb mussels or clams, scrubbed
- 12 oz smoked sausage, sliced
- 4 ears corn, cut into thirds
- 1½ lbs baby red potatoes
- 1 lemon, halved
- 3 cloves garlic, smashed
Boil Liquid
- 12 cups water
- ½ cup Southern Drawl Southern Cajun Seasoning
- 3 tbsp Old Bay seasoning
- 2 tbsp brown sugar
- 2 tbsp lemon juice
- 2 bay leaves
- 1 tbsp salt (adjust to taste)
- 1 tbsp black pepper
- ½ tsp crushed red pepper (optional)
- 2 tbsp butter
How to Make It
- Boil the base: In a large stockpot, bring water, Southern Drawl Southern Cajun Seasoning, Old Bay, brown sugar, lemon juice, garlic, bay leaves, salt, pepper, and red pepper to a boil.
- Add potatoes: Add potatoes and cook for 10–12 minutes until just fork-tender.
- Add corn & sausage: Add corn and sausage. Cook for 5–7 minutes until corn is tender and sausage is heated through.
- Add seafood: Add shrimp, crab, and mussels (or clams). Cook for 4–6 minutes, until shrimp are pink and seafood is cooked through. Discard any mussels or clams that didn’t open.
- Finish & drain: Remove from heat and stir in butter. Drain well.
- Serve & enjoy: Pile onto a large serving tray or table lined with paper. Squeeze lemon over the top and dig in!
Pro Tips
- Don’t overcook the shrimp — add them last and cook just until pink.
- Make it spicier with extra red pepper flakes or hot sauce.
- For even more flavor, let the boil sit for 5–10 minutes before draining.
- Use frozen seafood — just add 1–2 extra minutes of cook time.
