Ingredients
Serves 4–6
- 2 lbs russet potatoes, peeled or unpeeled, cut into 1/2-inch cubes
- 2 tbsp olive oil
- 3 tbsp Southern Drawl French Fries Seasoning
- 1/2 cup onion, diced
- 1/2 cup red bell pepper, diced (optional)
- 2 cloves garlic, minced (optional)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish)
How to Make It
- Prepare the potatoes: Wash and cut potatoes into 1/2-inch cubes. Rinse and pat dry for extra crispiness.
- Season the potatoes: In a large bowl, toss potatoes with olive oil and Southern Drawl French Fries Seasoning until evenly coated.
- Cook the onions & peppers: Heat a large skillet over medium heat. Add a little oil and sauté onion and bell pepper for 3–4 minutes until softened.
- Add the potatoes: Add the seasoned potatoes to the skillet. Spread in an even layer. Let cook undisturbed for 5–6 minutes to get a crispy edge.
- Stir & cook: Stir potatoes and continue cooking for another 10–12 minutes, stirring occasionally, until golden brown and tender.
- Garnish & serve: Add garlic (if using) and cook for 1 more minute. Taste and adjust seasoning. Garnish with fresh parsley and serve hot!
