Ingredients

Serves 2

  • 2 large flour tortillas
  • 1 cup cooked shredded chicken
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • 1/4 cup red bell pepper, diced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp Southern Drawl Original Hot Sauce (plus more for drizzling)
  • 1 tbsp cream cheese (optional, for extra creaminess)
  • 1 tbsp chopped fresh cilantro
  • 1 tbsp olive oil or butter
  • Salt & pepper to taste

How to Make It

  1. Prepare the filling: In a bowl, mix shredded chicken, red bell pepper, red onion, hot sauce, cream cheese (if using), salt & pepper.
  2. Assemble: Lay one tortilla flat. Sprinkle with half of the cheese. Add the filling, then top with the remaining cheese. Fold tortilla in half.
  3. Cook: Heat a skillet over medium heat. Add oil or butter. Cook quesadilla for 2–3 minutes per side, until golden brown and cheese is melted.
  4. Slice: Remove from skillet and let rest for 1 minute. Slice into wedges.
  5. Drizzle & garnish: Drizzle with more Southern Drawl Original Hot Sauce and garnish with fresh cilantro.
  6. Serve & enjoy: Serve hot with sour cream, guacamole, or salsa on the side. Enjoy the bold, Southern heat!
