- 1 lb boneless chicken thighs or breast, cut into 1″ pieces
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 celery stalks, diced
- 4 cloves garlic, minced
- 2 cups long grain rice
- 4 cups chicken broth
- 1 (14.5 oz) can diced tomatoes
- 2–3 tbsp Southern Drawl Southern Cajun Seasoning (to taste)
- 1 tsp dried thyme
- 1 bay leaf
- Salt to taste
- Green onions & parsley, for garnish
How to Make It
- Brown the sausage: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add sausage and cook until browned. Remove and set aside.
- Cook the chicken: In the same pot, add chicken pieces. Season with 1 tbsp Southern Drawl Southern Cajun Seasoning. Cook until browned and almost cooked through. Remove and set aside.
- Sauté the veggies: Add onion, bell peppers, celery, and garlic to the pot. Sauté 3–4 minutes until soft and fragrant.
- Add rice & seasoning: Stir in rice and cook for 1–2 minutes. Add 2–3 tbsp Southern Drawl Southern Cajun Seasoning, thyme, and bay leaf. Stir well.
- Add liquids: Pour in chicken broth and diced tomatoes (with juices). Bring to a boil.
- Simmer: Return sausage and chicken to the pot. Stir, reduce heat to low, cover and simmer 18–20 minutes, or until rice is tender and liquid is absorbed.
- Add the shrimp: Add shrimp and cook uncovered for 5–6 minutes, or until shrimp are pink and cooked through.
- Garnish & serve: Remove bay leaf. Taste and adjust seasoning if needed. Garnish with green onions and parsley. Serve hot and enjoy!
